  1. Primero ponemos a hervir el agua con el piloncillo...
  2. Cuando esté completamente disuelto, bajamos la flama y ponemos los chipotles (yo los pongo sin rabito, pero eso es al gusto de cada quién) los guajillos despepitados y el chile ancho también despepitado...
  3. Mientras tanto, en un comal o sartén, ponemos a tostar el orégano, clavo, pimientas y la hoja de laurel, cuidando que no se nos quemen, una vez tostados los retiramos...
  4. Luego ponemos a tostar los ajos, jitomate y 1/4 de cebolla....
  5. Una vez tostados, ponemos en la licuadora junto con los otros ingredientes que previamente habíamos tostado (excepto el laurel) sal al gusto, mejorana, comino, vinagre, los guajillos que teníamos en cocción despepitados, el chile ancho de la cocción también despepitado y una taza de agua de la cocción de los chiles, licuamos por un minuto....
  6. En una hoyita ponemos la cucharada de aceite y cuando esté caliente ponemos el 1/4 de cebolla restante cortado en julianas o medias lunas y dejamos sofreír hasta trasparentar...
  7. Luego agregamos nuestro adobo de la licuadora colando para evitar cualquier pellejito, agregamos la hoja de laurel que teníamos previamente tostada y dejamos que suelte el primer hervor, entonces empezará a espesar.....
  8. Agregamos los chiles chipotles de la cocción inicial, bajamos la flama al mínimo, ponemos un poco más de agua de la cocción de los chiles y dejamos hervir durante 5 minutos...
  9. Al final solo rectificamos la sal y verificamos el espesor, en caso de ser necesario solo agrega un poco más de agua de la cocción de los chiles y Listo!
