  1. Lo primero que haremos será asar los chiles, ponerlos en bolsa a sudar y posteriormente los limpiamos: quitamos piel, venas, semillas y reservamos
  2. Ponemos a cocer los jitomates, después los ponemos en la licuadora junto con el agua en la que los cocimos y agregamos la cebolla
  3. Los ajos y una cucharada de consomé de pollo y licuamos
  4. Agregamos el queso crema y volvemos a licuar y reservar
  5. Rellenamos los chiles con los champiñones y el queso
  6. Cerramos con palillos
  7. Separamos las claras de las yemas de los huevos y comenzamos a batir las puras claras hasta duplicar su tamaño después vamos agregando las yemas y batiendo poco a poco
  8. Ya teniendo bien batidos los huevos ponemos aceite a calentar y pasamos los chiles por harina...
  9. ... posteriormente por el huevo e introducimos en el aceite hasta que se dore el huevo, hacemos esto con todos los chiles
  10. Teniendo todos los chiles listos. En una sartén ponemos un poquito de aceite a calentar y vaciamos la salsa licuada, cuando esta hierva ponemos uno a uno los chiles dentro del caldo cremoso y listo servimos calentitos, acompañar con arroz o ensalada fría.
